Whilst I can't wait for summer to arrive, I am mindful that there aren't many opportunities to cook those hearty winter comfort dishes. So I made this lovely winter pork dish tonight for dinner for Mr Carrots and me.
I marinated 400g of pork fillet in some crushed garlic, dried herbs, salt, pepper and olive oil for about 20 minutes. I preheat the oven at 200 degrees.
Meanwhile, I cooked half a cup of quinoa in a saucepan with a cup and half of water over medium heat. After 10 minutes, I tossed in cauliflower which had been cut into small florets and then a handful of frozen peas. After 18 mins, I stirred the quinoa mixture to ensure everything was cooked. Then seasoned and turned the heat off and kept the lid on to retain heat.
In a small bowl, I then mixed a couple of teaspoons of mustard, 2 teaspoons of balsamic vinegar, 1 tspn of brown sugar with a cup of water. Set aside. I cut a small apple and a small onion into small wedges.
I browned the pork fillet in a oven proof frypan and added the apple and onion pieces. Pour half of the mustard & vinegar mixture into the frypan before placing it into the oven and cook for 10 mins. After 10 mins, pour the remainder of the mustard & vinegar mixture and turn the fillet. Cook in the oven for another 6-7 minutes until cooked. Remove pork from pan and rest for 5-7 minutes. Deglaze the pan on medium heat on the stove with 3/4 cup of stock or water. Slice the pork.
Serve the quinoa mix on plates and add the pork. Spoon some of the sauce and roasted apples/onions.
