The winter chill brought on a bit of a pasta crave... so I thought it would be a great opportunity to try some wholemeal pasta. There's lots of dietary fibre in wholemeal pasta and it is quite satisfying so you don't have to eat too much to feel full.
Prepare your veggies - cut the cauliflower into small florets, dice your tomato & snow peas, finely chop garlic and onions. Gather some dried italian herbs and chilli(fresh or dried).
Cook the wholemeal pasta according to the packet instructions. In a pan on medium heat with olive oil, saute the garlic and onion for a few minutes before adding cauliflower, tomato, snow peas, chilli and the herbs. Add a small amount of water and tomato passata. Cook and stir regularly for 8-10 mins or until cauliflower is cooked. Drain pasta and stir through the sauce. Serve with rocket leaves and more fresh chilli or parsley if you wish! You don't need to add cheese if you are mindful of calories as this is delicious without it.
