Omelette with celery and snow peas

I had this delicious omelette this morning. I made it with 3 whole eggs but only kept two of the egg yolks in - I was tempted to use only one yolk but as I was heading to training afterwards, I decided I could justify the extra yolk!!! If you are watching your weight, you may want to only use the egg whites. I simply love eggs as they are so versatile!

I made this omelette with thinly sliced celery stalks, julienned snow peas & onions but of course try all sorts of things - I just love opening my fridge and seeing what I can use. If I don't have anything fresh, I use a frozen carrot, pea and corn mix which is just as delicious! Just be creative!
To the eggs, I added about 1/4 cup skim milk and 1/4 cup water and beat well. Add all your chopped ingredients and seasoned with salt and pepper.
You need to use a good, clean non stick pan otherwise you'll need to use a lot of oil before you can slide it off easily. Add a tbspn of oil in a fry pan (I used a 28cm pan which is just right for me) and turn to medium/hot heat. Once the pan is nice and hot, I pour the egg mixture in and turn the heat down to low. I push the egg mixture around to make sure all the egg gets cooked. I like my egg just done (not too runny) so it probably took about 2-3 mins. Adjust the time according to your liking. I run a flipper around the edge to loosen from the pan and slide the omelette onto a plate - when half the omelette is on the plate, fold the remaining half over itself to get that cool 'flip'. I used chopped celery leaves as the garnish (no waste!) but you can use fresh parsley or chives. This omelette is quite healthy as I haven't used additional butter or cheese but seriously it still tastes great without these ingredients.  By eliminating these items, you save lots of kilojoules without much sacrifice in taste. A tbspn of butter contains about 100 calories and loads of saturated fat while a handful of grated full fat cheese is probably similar too!  It would take me about 30 mins of intense exercise to burn just these 2 small things....no thanks!
Instead, I added a side of fresh fruit like strawberries to ensure I got a low kilojoule & GI kick with lots of anti-oxidants!
