Kangaroo fillet with rocket, asparagus and potato salad

This is a wonderful dinner for you to try.
This is my second Kangaroo dish on my blog - I'm obviously a big fan of kangaroo! 
Kangaroo tastes a little gamey but if you get the fillets, it is really quite mild. It is so rich in iron and protein yet so lean so I really encourage you to give it a try. Allow about 150gms per person (you may need to feed your man about 200gms). 

I marinate my fillets in garlic, parsley, lots of pepper, a little salt and EVOO for about an hour.  The meat should be served medium rare so make sure you don't overcook it otherwise it will be really tough. I grill the fillets on a skillet pan for about 3 mins each side on medium to high heat then rest under some foil for a couple more minutes.
This time I served it with a warm salad. This salad goes really well with the kangaroo as it provides a fresh light and crisp balance. It's super easy too - I just tossed rocket, blanched asparagus, semi dried tomato, boiled potato, and spanish onion together with a dressing of EVOO, mustard, white wine vinegar, honey, salt, pepper.
