Yes, what a twist on a normal steak burger!
I picked up the kangaroo fillets from the local supermarket so it should be quite easy for you to find at your's. Kangaroo fillet steak is actually quite reasonably priced compared to say beef or lamb and also low in fat and high in protein & iron. I saw kangaroo burger patties and was almost going to buy those but I took some time to read the ingredients and discovered the patties contained some additional extra ingredients with strange numbers so I grabbed the fillets instead which said "100% kangaroo meat" - much better!
The ones I got were quite thin - almost like minute steak thickness (about 1.5cm).
I decided I wanted to make a spicy tomato salsa as I thought it would go deliciously with this. I threw some diced cherry tomatoes, diced onion, a clove of garlic in a small bowl and mixed in some balsamic vinegar, a teaspoon of brown sugar, some salt and pepper, dried parsley & basil (didn't have fresh) and some chilli flakes. Added a small quantity of oil in a small saucepan on medium heat and threw the mixture in. Then I reduced the heat to low. Stirred regularly until it reduced until it's a like a jam consistency - it took about 15 mins for me.
While that's going, cut the remaining ingredients that you want to put in your burger - use whatever you want! I used tomato, iceberg lettuce and onion - nice and simple. So just wash, cut and set aside.
I tenderised the kangaroo meat using the back of a knife (you can use a mallet if you have) and seasoned well with salt and pepper and brushed with a light layer of oil.
Using a skillet pan on medium heat, I brushed some oil and started to caramelise the onion. After a few minutes, I placed the fillets in the pan and cooked for 3 mins. Then I flipped them and cooked the other side for another 2 mins and removed from heat and kept them warm. I kept the onions on for a little bit longer as I wanted more caramelising.
Lightly grill the buns on the same skillet. I used some chia seed wholegrain buns from the bakery and cut in half - a more healthy choice. Then I assembled the burger with my ingredients and salsa and served with a low fat healthy coleslaw (see separate post).
Just some nutritional facts which I read about kangaroo fillet - it's only 2% fat, is only about 100 calories per 100g and rich in iron and zinc. So judging by these facts, my burger came in under 600 calories with loads of protein, fibre, and essential minerals & vitamins - yet another way to make a yummy meal out of super healthy ingredients! I hope you can all give this a try one night too!
