Healthy packed lunches

Does anyone else think it can be stressful to go out and find food to eat at lunchtime? Particularly if you've jumped straight out of a meeting or appointment and have only 30 minutes until the next, you dash outside and get lunch paralysis! What to eat? Sandwich, sushi, pasta, chinese, ahhh - too much choice! And I know I always worry about how long some of the food has been sitting there, how fresh the ingredients are and what secret fats and calories might be hiding in the foods. 

I've been in the habit of making Mr Carrots' lunches over the last few months and now that I'm heading back to work myself, I'll be making bigger batches on Sunday afternoon for both of us! 
This week, we are having steamed broccoli, stir fried tofu & green capsicum with brown rice. Everyone knows how to make an easy stir fry and the greens just take a few minutes in the microwave (yes, I love steaming in the microwave!) and the rice is a no brainer.  But of course I can already hear you say...but who has the time?! Well once you get used to the routine, it takes so little time - perhaps 40 mins but think about the time you reclaim by not having to queue for some crappy sandwich or unhealthy creamy pasta....  Plus this way we ensure we have a healthy, nutritious and warm lunch everyday! Not to mention that it is much cheaper....using seasonal vegetables like I have means I made all these meals (8 in total) for about $8 (yes, in total for ALL 8 meals, not per meal).... so you do the sums, no doubt there is a huge financial benefit too.
