Low fat coleslaw dressing (or use on any salad!)

If you read my previous post on my awesome kangaroo burger, you will have seen I served it with a coleslaw. Coleslaw dressing (mine is above) is normally made with a mayonnaise base which can be a bit in fat and high in calories. I know some of you buy fat free dressing but next time you do, take a look at the ingredients - there are lots of thickeners and even loads of sugar so sometimes it's just healthier, easier and better to make your own. Here's what I used for a side salad for 2 people:
Coleslaw:
1/4 cabbage head, thinly shredded
1/2 carrot, julienned or grated
1/4 cup brown onion
2 tbpsn chopped shallots (spring onion)
Dressing:
2 tbspn natural plain yoghurt (or greek)
Juice of 1/2 lemon
1 tspn of dried herbs (I used parsley and basil - can use fresh if you have!)
1 tspn of rice wine vinegar (can probably use white wine or plain white vinegar)
1/2 tspn honey (optional)
salt & pepper to taste


I placed the cabbage, carrots, onion and shallots in a mixing bowl. Then mixed together the dressing ingredients and throw on the vegies! Easy!
